From Dolcetto grapes, harvested by hand in small red baskets. We reproduce the old system of pressing on foot, only half of the grapes are pressed, the other part is only shelled leaving the grapes intact. This allows us to rediscover the fragrance of ancient flavors, with a less aggressive tannin.
Wine obtained from spontaneous fermentation and using only indigenous yeasts, not clarified, aged in cement.
